Low-Carb Woes: The Gutsy Diet Series

Ugh to low-carb. I’ve been doing pretty terribly on my diet, but I am making some progress. The other night we went out to eat at a burger joint in Midtown, so you can only imagine how that went.


Since we walked right past it, I also decided I probably needed an ice cream cone as well to top it off…You know, just to be on the safe side.

In my defense, I read this article that morning. It said I could have ice cream on a diet, so I had ice cream.

I think I’ve finally figured out the key to my hangriness, though. Quit my low-carb diet.

Just kidding, of course, although I wish I could. But something has to change. I am exhausted and it’s not healthy, which is the entire point of the diet in the first place.

Plus, I am exhausted. I’ve been blaming the brain fog on allergies, but I think not eating over 500 calories a day because I am limiting my carbs and eating the wrong things may also (DEFINITELY) be a contributing factor.

What I’ve learned? I am not disciplined or organized enough to stay under 50 grams of carbs per day. I don’t have time (and really don’t want to make time) in the evenings to meal prep. In other words, I am lazy.

So how am I going to fix this?

See attached! My meal plan for the week, which, for breakfasts and lunches, I've loosely based off of a Keto diet. This is the first time I've done this. Dinner hasn't been updated because I still need to plan that with my boyfriend, so I'll do that this weekend.  Dinners haven't really been a problem yet and we've done well with them. It's just my breakfasts and lunches that I have trouble with. Not anymore, hopefully.

I have been doing pretty well with the smoothies (my boyfriend seems to love the blender more than I do), so that’s a plus. At least it isn’t collecting dust in the cabinet.

And another plus? I’m finally under 170 again! That’s a major milestone for me.

We’re hopefully going to start going to Stone Mountain again. That place is my jam, and prior to spraining my ankle, it was where I spent the majority of my mornings.
